Turkey Lo Mein
- 6 ounces uncooked linguine
- Cooking spray
- 2 1/2 teaspoons dark sesame oil
- 1 pound turkey cutlets, cut into strips
- 2 cups snow peas, trimmed
- 1 cup red bell pepper strips
- 1 cup broccoli florets
- 1/2 cup shredded carrot
- 2 tablespoons chopped green onions
- 1 teaspoon minced peeled fresh ginger
- 1/8 teaspoon crushed red pepper
- 2 garlic cloves, crushed
- 3 tablespoons low-sodium soy sauce
- Cook pasta according to package directions, omitting salt and fat. Drain.
- Coat a large nonstick skillet with cooking spray; add 1 teaspoon oil. Place over high heat. Add turkey, and stir-fry 5 minutes or until done. Add snow peas and next 7 ingredients; stir-fry 4 minutes. Add pasta and soy sauce; cook 2 minutes. Remove from heat; add remaining 1 1/2 teaspoons oil, and toss well to coat.
