Salad Bongo Bongo
- 1 small c. mandarin oranges
- 3 bananas
- 3 mangoes
- 1 small can pineapple chunks
- 1/4 c. shredded coconut
- 1/4 c. chopped pecans
- 1/3 c. lemon juice
- 3 Tbsp. sugar
- 6 large crisp lettuce leaves
- 1 (8 oz.) block Philadelphia cream cheese
- 1 (No. 2) can crushed pineapple, drained
- 3/4 c. sugar
- juice from 1/2 lemon
- 1 pt. whipped cream
- 2 pkg. gelatin
- 1/2 c. boiling water
- Let cheese reach room temperature.
- Drain pineapple and mix with cheese.
- Heat lemon juice and sugar together until dissolved. Now dissolve gelatin in 1/2 cup boiling water and mix with lemon juice and sugar.
- Bring this mixture to a boil.
- Let cool and add whipped cream.
- Fold this mixture into the cheese and pineapple and mix well.
- Refrigerate overnight.
- Serves 4.
