Mexican Casserole
- 1 doz. corn tortillas
- 3 lb. ground beef
- 1 large onion
- 1 green pepper
- salt and pepper
- 1 lb. Cheddar cheese
- 2 cans black olives
- 3 (15 oz.) can chili beans
- 2 cans cream of chicken soup
- 2 cans Ro-Tel tomatoes
- Chop onion and green pepper.
- Saute with ground beef. Generously grease a 10 x 14-inch baking dish.
- Place a layer of corn tortillas on bottom.
- Add a layer of meat mixture, then a layer of chili beans, undrained.
- Follow with a generous layer of grated cheese, then a layer of sliced black olives.
- Repeat layers until all ingredients are used.
- Spread cream of chicken soup on top, then pour Ro-Tel tomatoes over, cutting tomatoes in small pieces.
- Cover and bake at 350u0b0 until thoroughly heated, 45 minutes to 1 hour.
