My Best Friend'S Easy Enchiladas

  1. Cut up chicken breast into small pieces and drop into deep pan of boiling water.
  2. Continue to boil until chicken floats to top of water.
  3. Heat oven to 350u0b0.
  4. Remove chicken and place into medium size bowl.
  5. Allow to cool and separate with fingers or 2 forks. Mix in carton of sour cream, half of picante sauce and half of cheese.
  6. Spray large baking sheet with Pam or lightly butter. Arrange 3 to 4 tortillas on sheet and fill centers generously with filling mixture.
  7. Fold sides to center and flip over so that seams are on bottom.
  8. Now mix rest of cheese and 1/4 of picante sauce and spoon over top of enchiladas.
  9. Bake at 350u0b0 for approximately 15 to 20 minutes until cheese on top melts.
  10. Remove from pan with a spatula.
  11. Enjoy!
