My Best Friend'S Easy Enchiladas
- 1 pkg. large flour tortillas
- 1 (16 oz.) jar Pace picante sauce
- 1 (8 oz.) carton sour cream
- 1 (8 oz.) pkg. shredded Cheddar cheese
- 1 to 2 lb. boneless chicken breast
- Cut up chicken breast into small pieces and drop into deep pan of boiling water.
- Continue to boil until chicken floats to top of water.
- Heat oven to 350u0b0.
- Remove chicken and place into medium size bowl.
- Allow to cool and separate with fingers or 2 forks. Mix in carton of sour cream, half of picante sauce and half of cheese.
- Spray large baking sheet with Pam or lightly butter. Arrange 3 to 4 tortillas on sheet and fill centers generously with filling mixture.
- Fold sides to center and flip over so that seams are on bottom.
- Now mix rest of cheese and 1/4 of picante sauce and spoon over top of enchiladas.
- Bake at 350u0b0 for approximately 15 to 20 minutes until cheese on top melts.
- Remove from pan with a spatula.
- Enjoy!
