Island Rice
- 1 tablespoon butter or margarine
- 2 cups chopped celery
- 1 small onion, chopped
- 2 garlic cloves, minced
- 4 cups water
- 2 chicken bouillon cubes
- 1/2 cup raisins
- 1 tablespoon brown sugar
- 1 teaspoon curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon pepper
- 1 1/2 cups uncooked basmati rice
- 1/2 cup chopped pecans
- 1/2 cup chopped apple
- Melt butter in a large saucepan; add celery, onion, and garlic, and saute until tender. Add 4 cups water and next 7 ingredients; bring to a boil. Stir in rice; cover, reduce heat, and simmer 20 minutes. Remove from heat, and let stand 10 minutes. Stir in pecans and apple.
- Note: Basmati rice is a fine-textured long-grain rice. It can be found in Indian or Middle Eastern markets or the Indian or Middle Eastern departments of supermarkets.
