Oyster Dressing
- 1 stick margarine plus 2 Tbsp. olive oil
- 2 bunches green onions, chopped
- 1 c. celery, chopped
- 1 c. onions, chopped
- 1/2 c. bell pepper, chopped
- 1 c. fresh parsley, chopped
- 3 or 4 toes garlic, minced
- 1/2 gal. oysters (save water)
- about 1/2 loaf French bread
- 1 tsp. thyme
- 2 bay leaves
- 2 eggs
- salt, pepper and cayenne to taste
- In heavy skillet, saute seasonings until transparent.
- Add bread that has been soaked in oyster water and squeezed out and chopped.
- Cook about 15 minutes.
- Add oysters, thyme, bay leaves, salt, pepper and cayenne to taste.
- Cook about 15 minutes.
- Let cool to room temperature and add 2 beaten eggs.
- Should dressing be too wet, add a little bread crumbs.
