Santa Fe Turkey Skillet
- 2 (1/2-pound) turkey tenderloins, cut crosswise into 1/4-inch-thick slices
- 1 1/2 tablespoons chili powder
- Cooking spray
- 8 green onions, cut into 1-inch pieces
- 1 large garlic clove, minced
- 1 (15-ounce) can no-salt-added black beans, rinsed and drained
- 1 (10-ounce) package frozen whole-kernel corn, thawed
- 1/4 cup water
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 8 cherry tomatoes, halved
- Combine turkey and chili powder, tossing until turkey is coated. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add turkey, and saute 5 minutes or until done. Remove turkey from skillet; set aside.
- Coat skillet with cooking spray; place over medium-high heat until hot. Add green onions and garlic to skillet; saute 2 minutes. Add beans and next 4 ingredients; cook, stirring constantly, 3 minutes or until mixture is thoroughly heated.
- Add turkey and tomatoes to skillet; cook, stirring constantly, until mixture is thoroughly heated.
