Tex-Mex Dip
- 3 medium avocados
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. (8 oz.) sour cream
- 1/2 c. mayonnaise
- 1 pkg. taco seasoning
- 2 (10 1/2 oz.) cans bean dip
- 1 c. chopped green onions and tops
- 3 medium tomatoes, chopped (2 c.)
- 1 (8 oz.) pkg. shredded sharp Cheddar cheese
- large tortilla chips
- Peel and mash avocados with lemon juice, salt and pepper. Combine sour cream, mayonnaise and taco seasoning mix in a bowl. Spread bean dip on a shallow serving platter.
- Top with seasoned avocado mixture.
- Layer with sour cream and taco mixture. Sprinkle with chopped onions, tomatoes and olives.
- Cover with shredded cheese.
- Serve chilled with chips.
- Makes 16 appetizer servings.
