Midnight Mystique
- 1 3/4 c. flour (all-purpose)
- 2 c. sugar
- 3/4 c. cocoa
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1 c. strong black coffee or 2 tsp. instant coffee with 1 c. boiling water
- 1 c. buttermilk or sour milk
- 1/2 c. vegetable oil
- 1 tsp. vanilla
- Heat oven to 350u0b0.
- Grease and flour two (9 x 1 1/2-inch) round pans or a 13 x 9 x 2-inch rectangular pan.
- In large bowl, blend flour, sugar, cocoa, baking soda, baking powder and salt.
- Add eggs, coffee, buttermilk, oil and vanilla and beat well for at least 2 minutes.
- (The batter will be thin.)
- Pour batter into pan(s) and bake 30 to 40 minutes or until a wooden pick comes out clean when inserted in center of cake.
- Cool for 10 minutes, then remove the cake from the pan.
- Cool completely and frost.
- Makes 10 to 12 servings.
