Nutty Apple Bread
- 1/4 c. peanut butter
- 2 Tbsp. margarine
- 2 large eggs
- 1/3 c. honey
- 1 1/4 c. whole-wheat flour
- 1 1/4 tsp. baking soda
- 2 tsp. ground allspice
- 3/4 c. rolled oats (quick cooking)
- 1/4 c. wheat germ
- 2/3 c. plain Dannon premium yogurt
- 1 c. apple, finely chopped
- 1/4 c. walnuts, chopped
- Preheat oven to 350u0b0.
- Coat a 9 x 5-inch pan with nonstick cooking spray.
- In large bowl, mix peanut butter, margarine, egg and honey until smooth; set aside.
- In medium bowl, sift together flour, baking soda and allspice.
- Add oats and wheat germ; mix thoroughly.
- Combine peanut butter mixture with flour mixture. Add yogurt, apples and walnuts; blend well.
- Pour batter into prepared pan.
- Bake for 60 to 65 minutes or until toothpick inserted comes out clean.
- Remove from pan; let cool.
- Store in plastic wrap.
- Makes 1 loaf.
