Quick Banana Bran Muffins

  1. In large bowl, combine the oat bran or the pulverized rolled oats, flour, brown sugar, baking powder, cinnamon, soda and nutmeg until smooth.
  2. In another bowl, combine the buttermilk, oil, mashed banana and egg.
  3. Stir the liquid ingredients into the dry ingredients all at once, stirring just until dry ingredients are moistened.
  4. Fold in the dates.
  5. Grease 12 large muffin cups generously.
  6. Spoon muffin batter into the cups.
  7. Bake at 375u0b0 for about 18 minutes or until a toothpick inserted in the center comes out clean.
