Steamed Brown Bread
- 1 qt. Indian meal
- 1 pt. c. rye flour
- 1 qt. sweet milk
- 1 c. molasses
- 2 tsp. Saleratus *
- a little salt
- 1 c. boiling water
- 1 c. chopped dates
- 2 eggs, beaten
- 1 tsp. vanilla
- 3 tsp. melted butter
- 1 3/4 c. flour
- 1/2 tsp. salt
- 1 tsp. soda
- 1/2 c. nuts
- 2 c. raisins
- 1/2 c. sugar
- 1 tsp. salt
- 1/4 c. butter
- 2 cakes yeast (or pkg.)
- 2 eggs, slightly beaten
- 6 c. flour
- 2 c. water
- Pour 2 cups boiling water over raisins; allow to cool.
- Add salt, butter and sugar, then eggs.
- Dissolve yeast in 1/2 cup warm water.
- Put all of this in large bowl.
- Add flour gradually, mixing with hands.
- Knead dough until smooth and elastic.
- Round up in greased bowl; turn to bring greased side up.
- Cover with damp cloth and let rise in warm place until double in size.
- Punch down; let rise again until almost double.
