Old-Fashioned Cranberry Sauce

  1. Heat oil in a medium saucepan over medium-high heat. Add onion, and saute for 4 minutes. Add sugar and the next 4 ingredients (through cranberries); bring to a boil. Reduce heat, and simmer for 8 minutes or until cranberries pop. Remove from heat, and stir in orange rind. Serve chilled or at room temperature.
  2. South-of-the-Border Cranberry Sauce: Add 3 tablespoons chopped fresh cilantro; 1 teaspoon grated lime rind; and 1 minced chipotle chile, canned in adobo sauce, to Old-Fashioned Cranberry Sauce. Serves 12 (serving size: 1/4 cup) Calories 112; Fat 2g (sat 1g); Sodium 6mg
