Shadow Pie
- 4 eggs, separated
- 2 c. milk, scalded
- 1 Tbsp. cornstarch
- 1 c. sugar
- 1 pkg. chocolate bits (12 oz.)
- 1 tsp. vanilla
- 1 Tbsp. unflavored gelatin
- 1/4 c. cold water
- 1 (10-inch) baked pastry shell
- Beat egg yolks in top of double boiler and gradually add milk. Blend cornstarch and 1/2 cup sugar and add.
- Cook over hot water stirring constantly until mixture coats a metal spoon.
- Dissolve 1 cup chocolate bits in 1 1/2 cups of the mixture.
- Add vanilla. Pour in pastry shell.
- Soften gelatin in water 5 minutes. Dissolve in remaining egg mixture and cool.
- Beat egg whites until frothy and gradually beat in remaining sugar.
- Fold into gelatin mixture and pour over chocolate layer.
- Chill.
- Chip remaining chocolate bits and sprinkle over top of pie.
- Approximate yield, 8 portions.
