Eggnog Christmas Salad

  1. Soften unflavored gelatin in the undrained pineapple and the lime juice for 5 minutes.
  2. Cook and stir over medium heat until gelatin dissolves.
  3. Cool to room temperature.
  4. Stir in eggnog. Chill until partially set.
  5. Fold in celery.
  6. Turn into a 12 x 7 1/2 x 2-inch pan.
  7. Chill until almost firm.
  8. Heat cranberry juice to boiling; stir in raspberry gelatin until dissolved.
  9. Chill until partially set.
  10. Stir in cranberry relish.
  11. Pour over eggnog layer and chill until set.
