Upside-Down Cake(No Fat, No Cholesterol)
- 1/4 c. brown sugar
- 2 Tbsp. light corn syrup
- 1 Tbsp. lemon juice
- 1 c. fresh or frozen blueberries or 1 c. drained pineapple
- 1 c. flour
- 2/3 c. sugar
- 1/3 c. cornstarch
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 egg whites
- 2/3 c. skim milk
- 1/3 c. light corn syrup
- 1 tsp. vanilla
- Combine first four ingredients and put into a 9 x 11-inch pan that has been sprayed with Pam.
- Combine dry ingredients.
- Beat egg whites, skim milk, syrup and vanilla together, just to combine.
- Add dry ingredients.
- Carefully pour over fruit mixture and smooth over.
- Bake at 350u0b0 for 35 to 48 minutes.
- Invert onto plate or platter, if desired.
