Light Banana Bread

  1. Stir together flour, baking soda, cinnamon, baking powder and nutmeg.
  2. In a mixing bowl beat together egg whites, sugar and banana.
  3. Add oil and mix well.
  4. Stir flour mixture into banana mixture.
  5. Spray an 8 x 4 x 2-inch loaf pan with nonstick coating. Transfer batter to prepared pan.
  6. Bake in a 350u0b0 oven for 55 to 60 minutes or until wooden toothpick inserted near center comes out clean.
  7. Cool in pan to 10 minutes.
  8. Remove from pan; cool thoroughly on a wire rack.
  9. Makes one loaf.
