Light Banana Bread
- 1 1/2 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. baking powder
- 1/4 tsp. ground nutmeg
- 2 egg whites
- 1 c. sugar
- 1 c. mashed ripe banana
- 1/4 c. cooking oil
- Stir together flour, baking soda, cinnamon, baking powder and nutmeg.
- In a mixing bowl beat together egg whites, sugar and banana.
- Add oil and mix well.
- Stir flour mixture into banana mixture.
- Spray an 8 x 4 x 2-inch loaf pan with nonstick coating. Transfer batter to prepared pan.
- Bake in a 350u0b0 oven for 55 to 60 minutes or until wooden toothpick inserted near center comes out clean.
- Cool in pan to 10 minutes.
- Remove from pan; cool thoroughly on a wire rack.
- Makes one loaf.
