Cheese And Spinach Puffs
- 1 (10 oz.) pkg. chopped spinach, thawed
- 1/2 c. finely chopped onion
- 1/2 c. water
- 2 eggs, slightly beaten
- 1/2 c. grated Parmesan cheese
- 1/2 c. shredded Cheddar cheese
- 1/4 c. plus 2 Tbsp. Blue cheese dressing
- 1 (8 1/2 oz.) box Jiffy corn muffin mix
- Combine spinach, onion, water in small saucepan.
- Bring to a boil and cook 10 minutes.
- Drain well and squeeze to remove excess liquid.
- Combine spinach mixture and remaining ingredients in medium size mixing bowl.
- Stir well.
- Cover and chill 2 hours. Shape into 1 inch balls.
- Place 1 1/2 inches apart on lightly greased baking sheets.
- Chill at least 30 minutes before baking. Bake at 350u0b0 for 10 minutes.
- Serve warm.
- Yield:
- 4 dozen.
