Sautéed Spinach With Raisins And Pine Nuts

  1. Place pine nuts in a large nonstick skillet over medium-high heat; cook 3 minutes or until lightly browned, stirring constantly. Remove from pan; set aside.
  2. Heat oil in pan over medium-high heat. Add garlic; saute 30 seconds. Add spinach; cook 4 minutes or until spinach wilts, stirring occasionally. Remove from heat; sprinkle with salt and next 3 ingredients. Add pine nuts and raisins; toss well. Serve immediately with a slotted spoon.
