Sautéed Spinach With Raisins And Pine Nuts
- 4 teaspoons pine nuts
- 1 teaspoon olive oil
- 2 garlic cloves, minced
- 2 (6-ounce) packages fresh baby spinach
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon crushed red pepper
- Dash of ground nutmeg
- 1/3 cup golden raisins
- Place pine nuts in a large nonstick skillet over medium-high heat; cook 3 minutes or until lightly browned, stirring constantly. Remove from pan; set aside.
- Heat oil in pan over medium-high heat. Add garlic; saute 30 seconds. Add spinach; cook 4 minutes or until spinach wilts, stirring occasionally. Remove from heat; sprinkle with salt and next 3 ingredients. Add pine nuts and raisins; toss well. Serve immediately with a slotted spoon.
