Scalloped Carrots With Cheese
- 12 medium carrots, sliced and cooked
- 1 small onion, chopped
- 1/4 c. butter or margarine
- 1/4 c. flour
- 1 tsp. salt
- 1/4 tsp. dry mustard
- 2 c. milk
- 1/8 tsp. pepper
- 10 slices American or sharp Cheddar cheese
- 1/4 tsp. celery salt
- cracker crumbs (can use crushed corn flakes instead of cracker crumbs)
- Cook carrots until tender, drain and set aside.
- Cook onion in butter in saucepan for 2 to 3 minutes.
- Add milk, do not boil. Stir in flour, salt and mustard, until thick and smooth, then add pepper and celery salt.
- Pour into 2-quart casserole.
- Arrange cooked carrots and cheese.
- Pour sauce over carrots, top with crumbs and "dot" with butter.
- Bake at 350u0b0 for 35 to 40 minutes.
