Fluffy Gold Cake
- 2 c. sifted Softasilk
- 1 1/3 c. sugar
- 3 tsp. double-action baking powder
- 1 tsp. salt
- 1/2 tsp. vanilla
- 1/3 c. high grade shortening
- 1 c. milk, divided
- 1/2 tsp. lemon extract
- 1/3 c. unbeaten egg yolks (4 medium)
- Sift together into bowl, Softasilk, sugar, baking powder and salt.
- Add shortening, 2/3 cup milk, extract and vanilla.
- Beat vigorously with spoon for 2 minutes by clock (about 150 strokes per minute).
- Or mix with electric mixer on medium speed (middle of dial) for 2 minutes.
- Add the rest of milk and egg yolks.
- Beat 2 more minutes.
- Pour batter into prepared pans.
- Pan size:
- 2 round layers, 8 x 1 1/2-inch.
- Temperature:
- 350u0b0 (moderate oven). Bake 30 to 35 minutes.
- Cool.
- Frost with White Mountain Icing.
