Oatmeal Cinnamon Rolls
- 1 c. quick oats
- 1/2 c. whole wheat flour
- 1/2 c. brown sugar
- 1 Tbsp. salt
- 2 Tbsp. margarine
- 2 c. boiling water
- 1 pkg. dry yeast
- 1/2 c. warm water
- 5 c. white flour
- Combine oats, wheat flour, brown sugar, salt and margarine in a large bowl.
- Pour over boiling water and stir in to combine. Dissolve the yeast in warm water.
- When the batter is cooled to lukewarm, add the yeast and stir in white flour.
- When dough is stiff enough to handle turn onto floured board and knead 5-10 min. Place in greased bowl, cover and let rise until doubled.
- Punch down and let rise again.
- Shape into roll - flatten slightly and put 1 tsp. cinnamon/sugar in middle.
- Shape into roll and place in a greased pan.
- Bake at 350 degrees for 30-40 minutes.
- Cool on rack, brush rolls with margarine for a soft crust.
