Santa Fe Pizza
- 1 c. yellow cornmeal
- 1 1/3 c. cold water, divided
- 1/4 c. plus 2 Tbsp. Parmesan cheese, divided
- 1 lb. ground beef
- 1 medium onion, sliced
- 1 clove minced garlic
- 1 small green pepper, sliced
- 3/4 Tbsp. each: basil and oregano
- 1/8 Tbsp. black pepper
- 1 can refried or pinto beans
- 1 c. or more shredded Mozzarella cheese and/or Cheddar cheese
- 1 (8 oz.) can tomato sauce
- Heat oven to 375u0b0.
- In a small bowl, mix the cornmeal with 2/3 cup of cold water.
- In a small heavy saucepan, bring the remaining 2/3 cup of water to a boil.
- Gradually add the cornmeal mixture to the boiling water.
- Lower heat and whisk with a fork until thick, about 3 minutes.
- Remove from heat and stir in 2 tablespoons Parmesan cheese.
