Peggy Sue'S Honey-Cinnamon Date-Nut Cake
- 1/2 cup stick margarine, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup evaporated skim milk
- 1 cup honey
- 1/2 cup applesauce
- 3 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pitted dates
- 1/4 cup chopped walnuts, toasted
- Cooking spray
- Preheat oven to 350u0b0.
- Beat margarine and sugars at medium speed of a mixer until well-blended (about 5 minutes). Combine evaporated milk, honey, and applesauce; set aside. Combine flour, cinnamon, baking soda, and salt. Add flour mixture to margarine mixture alternately with honey mixture, beginning and ending with flour mixture. Stir in dates and walnuts.
- Pour batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350u0b0 for 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
