Carrot Ring
- 1/2 cup matzo meal
- 1/4 cup potato starch
- 1/4 teaspoon salt
- 1 pound carrots, grated
- 1/2 cup sugar
- 1/4 cup raisins
- 1/2 cup white wine
- Zest of 1 lemon (2 to 3 teaspoons)
- 1/4 cup lemon juice (about 2 lemons)
- 1 large egg
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/4 cup margarine, melted
- Preheat oven to 350u0b0. Mix matzo meal, potato starch, and salt in a large bowl. Add carrot and next 8 ingredients; mix well. Stir in melted margarine. Pour mixture into a greased ring mold or 9-inch baking dish, and bake at 350u0b0 for 1 hour or until wooden pick inserted in center comes out clean. Let cool on a wire rack about 10 minutes. Turn out onto a plate. Serve at room temperature.
