Sicilian Chicken
- 1 small onion, chopped
- 1 cup matchstick-cut carrots
- 1 tablespoon bottled minced garlic
- 1 teaspoon chopped fresh rosemary
- 1/2 teaspoon crushed red pepper
- 4 (4-ounce) skinless, boneless chicken breast halves
- 3 tablespoons dried tomato sprinkles (such as L'Esprit)
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 (14.5-ounce) can diced tomatoes with green pepper and onion (such as Delmonte)
- 1/2 cup dry red wine
- 6 cups fresh spinach
- 2 cups hot cooked pasta
- Place first 11 ingredients in a 5-quart electric slow cooker in order listed. Cover with lid; cook on high-heat setting 3 1/2 hours.
- Add spinach (do not stir). Cover with lid; cook on high-heat setting 10 minutes. Uncover and stir until spinach wilts. Top pasta with chicken and vegetable mixture.
