Cheddar Potato Casserole

  1. Prepare the mashed potatoes or bring leftover potatoes to room temperature.
  2. Season to taste.
  3. Beat egg yolks into mashed potatoes until well mixed.
  4. Stir in the cheese, onion, green pepper, and celery salt.
  5. Salt to taste.
  6. Whip egg whites into soft peaks and fold into the potato mixture.
  7. Spoon into well buttered casserole, about 1 1/2-quart size.
  8. Sprinkle with paprika.
  9. Bake at 375u0b0 for 25 to 30 minutes.
  10. Garnish with parsley sprig.
  11. Serve immediately.
