Quick And Tasty Jambalaya
- 2 (6.8 oz. each) pkg. Rice-A-Roni Spanish rice
- 1 c. cooked, cubed chicken
- 1 c. cleaned, cooked and peeled shrimp
- 1 c. uncooked smoked sausage, sliced
- 1 1/2 c. chopped onions
- 3 cloves garlic, minced
- 1 tsp. hot pepper sauce
- 1 large green pepper, chopped
- 1 large can tomatoes, chopped (saving the juice)
- In a large skillet, saute rice mix as package directs.
- Stir in 2 cups water, chicken, sausage, onion, tomatoes with juice from can, garlic, hot pepper suace and contents of seasoning packet. Bring to a boil over high heat.
- Cover and simmer for 10 minutes. Stir in shrimp and green pepper.
- Simmer for 10 more minutes until most of the liquid is absorbed.
- More pepper sauce can be added if not hot enough.
- Serves 5.
