Fancy Egg Scramble
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 c. milk
- 1 c. shredded sharp Cheddar cheese
- 1 c. diced ham
- 1/2 c. chopped green scallions
- 3 Tbsp. butter
- 12 beaten eggs
- 1 (3 oz.) can mushrooms, sliced
- 4 tsp. butter, melted
- 1/2 to 3/4 c. bread crumbs
- 1/8 tsp. paprika
- In saucepan, melt 2 tablespoons butter.
- Blend in flour, salt and pepper.
- Add milk; cook and stir until bubbly.
- Stir in cheese until melted and set aside.
- In large skillet, cook ham and onions in 3 tablespoons butter until onion is tender, but not brown.
- Add eggs and scramble just until set.
- Fold into cheese mixture; turn into 7 1/2 x 12 x 2-inch baking dish.
- Combine 4 teaspoons butter (melted), crumbs and paprika.
- Sprinkle on top of eggs.
- Chill until 30 minutes before serving.
- Bake, uncovered, in 350u0b0 oven for 30 to 40 minutes or until bubbly.
- Serves 6 to 8.
