Crab Shrimp Gumbo
- 6 cups chicken broth
- 3 cups canned or fresh tomatoes
- 2 tablespoon chopped parsley
- 1 cup sliced celery
- 4 tablespoons margarine
- 1 cup chopped bell pepper
- 1 hot pepper (optional)
- 3 large onions, chopped
- 2 cloves garlic, finely chopped
- 1 10-ounce package frozen or 1 pound fresh okra, cut into 3/4-inch lengths
- 1 pound shrimp, cleaned and cut
- 1 10-ounce package frozen Alaskan crab
- 6 to 8 drops tabasco
- Measure broth into 5 quart Dutch oven.tdd tomatoes, parsley, and celery.
- Heat butter in skillet; add peppers, onion, garlic, and okra.
- Cover and saute without stirring until onion is soft but not browned.
- Add mixture to broth.
- Add all of the ingredients except seafood and tabasco.
- Heat to boiling.
- Reduce heat and simmer covered 2-1/2 hours.
- Stir in tabasco and seafood and cook an additional 15 minutes.
- May be served over hot rice.
- Serves 10-12.
