Peppy Dried Beans

  1. Cover the beans with water and soak overnight or at least 6 hours.
  2. Drain.
  3. Add ham, onion, celery, bell pepper, parsley, bay leaves and garlic.
  4. Cover with water and bring to a boil.
  5. Reduce to low heat and cook for about 2 hours. Add the butter, black pepper, salt, Worcestershire sauce and Tabasco sauce.
  6. Continue cooking over low heat for an additional hour or until tender. Remove bay leaves before serving.
