Overnight Breakfast Casserole
- 6 to 8 slices bread, crusts removed
- 8 large eggs (may need more if eggs are small; may use equivalent egg substitute)
- 10 oz. pkg. Jimmy Dean reduced fat sausage
- 1 c. skim milk
- 1 tsp. dry mustard
- salt and pepper to taste
- 1 c. Cheddar cheese
- 1 c. Swiss cheese
- 1 c. Mozzarella cheese
- 1 (13.5 oz.) can mushroom pieces
- Butter (or spray) a 9 x 13-inch cake pan.
- Line bottom of pan with bread.
- Brown sausage. Drain to remove as much fat as possible.
- Beat eggs, milk, mustard, salt and pepper together. Spread sausage evenly over bread slices. Top with mushroom pieces. Layer cheeses over mushrooms.
- Pour egg mixture over everything. Cover and refrigerate overnight.
- Bake at 350u0b0 (325u0b0 for glass pan) for 45 minutes or until knife inserted into center comes out clean.
