Reduced Fat Sloppy Joes
- 2 lb. lean ground beef
- 1 large onion, chopped (about 1 1/2 c.)
- 2 tsp. fresh chopped garlic
- 1 diced green bell pepper (about 1 c.)
- 2 tsp. chili powder
- 1 1/2 tsp. cumin
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 (28 oz.) can crushed Italian plum tomatoes
- 1 c. water
- 1 (16 oz.) can red kidney or other beans (juice and all)
- 1 c. tomato ketchup
- 1 lb. chicken (cutlets)
- flour, seasoned with pepper
- butter or margarine
- fresh or straw mushrooms
- 2 or more Tbsp. beef bouillon
- 1/2 c. Marsala wine
- Cut chicken into small serving pieces; coat with flour.
- Heat butter in pan until melted.
- Add the chicken and cook until browned on both sides.
- Add mushrooms and saute briefly.
- Add beef bouillon and Marsala.
- Mix together.
- Simmer 15 to 30 minutes, turning occasionally.
- Season to taste.
- Add flour and bouillon; will thicken.
- Add more bouillon for more stock.
- Add spices (garlic, parsley, etc.), if desired.
