Microwave Cheesy Ham And Vegetable Soup
- 1 c. diced potatoes
- 1 c. chopped celery
- 1 c. sliced carrots
- 2/3 c. chopped onion
- 1/3 c. water
- 1/4 tsp. celery seed
- 1/4 tsp. paprika
- 1/4 tsp. pepper
- 3 Tbsp. butter
- 3 Tbsp. flour
- 3 c. milk
- 1 (16 oz.) can cream-style corn
- 1 lb. cheese spread, cubed
- 2 c. diced, cooked ham
- Combine vegetables, water and seasoning in 3-quart casserole. Cook covered on Full power for 7 to 9 minutes or until tender. Stir halfway through cooking time.
- Place butter in 1 1/2-quart casserole.
- Heat Full power for 45 seconds to 1 minute and 15 seconds until melted.
- Stir in flour; blend to smooth paste. Gradually blend in milk.
- Cook covered on Full power for 8 to 10 minutes until thickened.
- Stir 2 to 3 times.
- Add sauce to vegetables.
- Stir in corn, cheese and ham through.
