Hot And Spicy Chicken Pie
- 3 chicken breasts, skinned, boned and cut into bite size pieces
- 1/2 c. chicken broth
- 1 medium onion, cut into thin wedges
- 1 (8 1/2 oz.) pkg. corn bread mix
- 2 (4 oz.) cans diced chili peppers, drained
- 1/2 (10 oz.) pkg. frozen whole kernel corn
- 1/2 c. sliced celery
- 1/2 c. salsa picante
- 4 tsp. cornstarch
- 1 1/2 c. shredded Cheddar cheese
- Combine chicken, corn, broth, celery and onion.
- Bring to boiling; reduce heat.
- Simmer 10 to 15 minutes.
- Add salsa.
- Stir 2 tablespoons water into cornstarch.
- Add to chicken mixture. Cook and stir until bubbly.
- Cook 2 minutes more.
- Prepare corn bread according to package directions.
- Pour chicken mixture into 10 x 6 x 2-inch baking dish.
- Sprinkle with cheese and chilies. Spoon corn bread atop.
- Bake in 425u0b0 oven 20 minutes.
- Serves 4 to 6.
