Roasted Spareribs
- 1/4 cup chopped onion
- 2 tablespoons chopped celery
- 2 tablespoons butter or margarine
- 1 cup cooked, mashed potatoes
- 3/4 cup soft breadcrumbs
- 1 egg, beaten
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon dried whole marjoram
- 1/4 teaspoon salt
- Dash of pepper
- 2 pounds pork spareribs (two rib sections)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup water
- Saute onion and celery in butter in a skillet until tender. Stir in potatoes, breadcrumbs, egg, parsley, marjoram, 1/4 teaspoon salt, and dash of pepper.
- Place stuffing on one half of sparerib slab. Fold remaining half over stuffing; secure with wooden picks. Sprinkle spareribs with remaining salt and pepper. Bake at 450u0b0, uncovered, for 30 minutes. Reduce heat to 350u0b0; pour water around spareribs . Cover; bake for 1 hour or until tender. Remove wooden picks. Cut into serving size pieces.
