Warm Spinach Salad With Chicken And Apples
- 2 (4-ounce) skinned, boned chicken breast halves
- 1/8 teaspoon salt
- Cooking spray
- 1 cup chopped Red Delicious apple
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/2 cup low-salt chicken broth
- 3 tablespoons apple jelly
- 1 tablespoon apple juice
- 1 tablespoon olive oil
- 1 teaspoon cider vinegar
- 1/8 teaspoon salt
- 1 small garlic clove, minced
- 6 cups fresh spinach leaves
- 1 cup chopped radicchio
- 1/4 cup (1-ounce) grated fresh Parmesan cheese
- Sprinkle chicken with 1/8 teaspoon salt. Place a nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 4 minutes on each side or until done. Slice into thin strips. Set aside; keep warm. Toss apple with lemon juice; set aside.
- Combine cornstarch and broth in a bowl; add to skillet. Bring to a boil. Cook 1 minute; stir constantly. Reduce heat to medium. Add jelly and next 5 ingredients (jelly through garlic); stir with a whisk. Add spinach and radicchio; cook 2 minutes or until spinach slightly wilts. Divide spinach mixture between 2 plates. Top with chicken and apple; sprinkle with cheese.
- Note: If radicchio is not available, increse the amount of spinach to 7 cups.
