Barbecue Beef Sandwiches
- 1 bacon slice, cut into 1-inch pieces
- 1 medium onion, chopped
- 1/2 cup ketchup
- 1/2 cup apple juice
- 1 tablespoon white vinegar
- 1 teaspoon prepared mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons sugar
- 12 ounces cooked roast beef, thinly sliced
- 4 kaiser rolls, split
- Cook bacon in a medium saucepan over medium-high heat 3 to 4 minutes; add onion, and saute 3 to 5 minutes or until bacon is crisp and onion is tender. Stir in ketchup and next 6 ingredients; bring mixture to a boil. Cover, reduce heat, and simmer, stirring occasionally, 15 to 20 minutes. Stir in sugar and sliced beef. Serve warm on kaiser rolls.
