Thai Coconut Noodles
- 2 cups snow peas, trimmed (about 8 ounces)
- 1 (8-ounce) package rice sticks
- 1 teaspoon dark sesame oil
- 1/2 cup chopped green onions
- 1 1/2 tablespoons minced peeled fresh ginger
- 2 garlic cloves, minced
- 1/2 cup light coconut milk (such as Hokan)
- 1/2 cup water
- 1/4 cup tomato paste
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon salt
- Dash of ground red pepper
- 1/4 cup minced fresh cilantro
- Cook snow peas and rice sticks in boiling water 3 minutes. Drain well.
- Heat oil in a large nonstick skillet over medium heat. Add onions, ginger, and garlic, and saute 2 minutes. Stir in milk and next 5 ingredients (milk through red pepper); bring to a boil. Cover; reduce heat, and simmer 5 minutes, stirring frequently. Combine snow peas, rice sticks, and green onion mixture in a large bowl, and sprinkle with cilantro.
