Green Tomato Relish
- 2 gal. green tomatoes, cored and quartered
- 2 medium heads cabbage, cored and quartered
- 6 large onions, quartered
- 12 bell peppers (red or green)
- 12 hot peppers
- 2 stalks celery
- 6 carrots
- 1 c. salt
- 1/2 gal. vinegar
- 2 c. molasses OR 1 qt. brown sugar
- 1 qt. granulated sugar
- 1 tsp. dry mustard
- 1/4 c. pickling spices
- Grind all vegetables in food chopper or processor.
- Mix with salt.
- Put in bag and hang on line overnight.
- Mix with vinegar, molasses or brown sugar, sugar, dry mustard and pickling spices tied in cheesecloth bag.
- Bring to boil and simmer for 25 to 30 minutes.
- Seal in sterile jars.
- Makes 20 to 22 pints.
