Coleslaw With Shrimp
- 4 cups water
- 8 ounces peeled and deveined large fresh shrimp
- 1/2 cup nonfat mayonnaise
- 1/3 cup nonfat sour cream
- 3 tablespoons lemon juice
- 1 tablespoon sugar
- 1 teaspoon celery seeds
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 (16-ounce) package finely shredded cabbage
- 1/4 cup thinly sliced green pepper
- 1/4 cup thinly sliced purple onion
- Bring water to a boil in a medium saucepan; add shrimp. Cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water.
- Combine mayonnaise and next 6 ingredients in a large bowl; stir with a wire whisk until smooth. Add shrimp, cabbage, green pepper, and onion; toss well. Cover and chill at least 1 hour.
