Turkey Carcass Soup

  1. Bring carcass to a boil in large pot; then simmer for 2 hours. Take
  2. carcass
  3. out
  4. of
  5. water and remove meat.
  6. Return meat to pot
  7. and
  8. add
  9. remaining ingredients.
  10. Simmer 1 hour. Yields 5 quarts.
