Turkey Carcass Soup
- 1 turkey carcass
- 4 qt. water
- 6 small potatoes, diced
- 4 large carrots, diced
- 1 large onion, diced
- 1 1/2 c. shredded cabbage
- 1 (7 oz.) can drained tomatoes, sliced (optional)
- 1/2 c. uncooked barley
- 1 Tbsp. Worcestershire sauce
- 1 1/2 tsp. salt
- 1 tsp. dried parsley
- 1 tsp. basil
- 1 bay leaf
- 1/4 tsp. pepper
- 1/4 tsp. paprika
- 1/4 tsp. poultry seasoning
- pinch of thyme
- Bring carcass to a boil in large pot; then simmer for 2 hours. Take
- carcass
- out
- of
- water and remove meat.
- Return meat to pot
- and
- add
- remaining ingredients.
- Simmer 1 hour. Yields 5 quarts.
