Old-Fashioned Pecan Pie
- 1 uncooked pie crust
- 1/2 c. flour
- 1/2 c. sugar
- 1/4 c. clear syrup or Karo
- 1/4 c. cane syrup
- 1/2 c. orange juice
- 4 eggs
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 tsp. vanilla
- 1/2 c. ground orange peel
- 1/2 c. or more chopped pecans (coconut may be substituted for pecans)
- Heat oven to 350u0b0.
- Mix flour, cinnamon and nutmeg.
- Set aside.
- Beat eggs until lemon colored (about 3 minutes).
- Beating well after each ingredient, add these to egg in order given: sugar, vanilla, clear syrup and cane syrup.
- Next add flour mixture alternately with orange juice, then add orange peel and pecans.
- Pour in uncooked pie crust and cook at 350u0b0 for 10 minutes.
- Reduce heat to 280u0b0.
- Cook 30 to 45 minutes until nice and fluffy.
- Similar to custard or pudding.
