Ginny'S Tomato-Shrimp Casserole

  1. Cook bacon until crisp.
  2. Drain on paper towel.
  3. Lower heat. Stir flour into drippings, cooking until brown 12 to 15 minutes. Stir in onion, red and green peppers, garlic, salt, pepper, red pepper and thyme.
  4. Cover and cook until vegetables are tender, about 10 minutes.
  5. Gradually add broth, okra, tomatoes and green onions.
  6. Cook 10 to 15 minutes.
  7. Stir in peeled, cleaned, raw shrimp.
  8. Cook 5 minutes more.
  9. Add bacon.
  10. Serve on rice.
  11. Serves 4 to 6.
