Ginny'S Tomato-Shrimp Casserole
- 1 slice bacon
- 2 Tbsp. flour
- 1 large onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- 1 tsp. garlic
- 3/4 tsp. pepper
- 1/4 tsp. thyme
- 1/4 tsp. ground red pepper
- 1 can chicken broth and water to equal 3 c.
- 1 c. sliced frozen okra
- 1 c. chopped, drained canned tomatoes
- 1 c. chopped green onions
- 2 lb. medium raw shrimp
- Cook bacon until crisp.
- Drain on paper towel.
- Lower heat. Stir flour into drippings, cooking until brown 12 to 15 minutes. Stir in onion, red and green peppers, garlic, salt, pepper, red pepper and thyme.
- Cover and cook until vegetables are tender, about 10 minutes.
- Gradually add broth, okra, tomatoes and green onions.
- Cook 10 to 15 minutes.
- Stir in peeled, cleaned, raw shrimp.
- Cook 5 minutes more.
- Add bacon.
- Serve on rice.
- Serves 4 to 6.
