Italian-Seasoned Sausage Ragu
- 5 tablespoons olive oil
- 2 cups yellow onion, 1/8-inch slices
- 1 1/2 cups carrot, peeled, 1/4 dice
- 1 1/2 cups red wine
- 28 ounces Italian-seasoned diced tomatoes
- 3 tablespoons tomato paste
- 1 package Jimmy Dean Regular Roll Sausage, cooked, crumbled, drained
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper, ground
- 6 tablespoons fresh basil, chopped
- Heat olive oil in a small pot on medium heat. Once heated, add onions and cook for 4 minutes. Add carrot and red wine; cook for a minute. Add diced tomato, tomato paste, and sausage. Simmer for 20 minutes. Add the heavy cream and stir; add salt and pepper. Bring to a simmer and cook for 5 minutes. Garnish with basil.
