Honey Roasted Fruit
- 4 large navel oranges
- 2 pink grapefruit
- 1 pineapple (ripe)
- 4 medium ripe bananas
- 2 Tbsp. lemon juice
- 1/2 tsp. dried thyme
- 1/4 c. honey
- 1/4 c. dark brown sugar
- sprigs of fresh mint (optional)
- Preheat oven to 350u0b0.
- Cut and peel oranges and grapefruit. Cut into segments.
- Save juices.
- Set aside.
- Peel pineapple; cut crosswise into 1/2-inch thick slices.
- Core center and cut into 8 slices in quarters.
- Peel bananas.
- Halve crosswise, then lengthwise.
- Toss in bowl with lemon juice.
- Arrange in 9 x 13 x 2-inch baking dish.
- Arrange pineapple, overlapping the pieces slightly.
- Next, a row of orange segments, followed by grapefruit and oranges, then finish with bananas.
- Can be made ahead of time to this point and refrigerated.
- Sprinkle with thyme.
- Drizzle honey over top, then brown sugar.
- Bake 30 minutes, basting twice with any pan juices.
- Garnish with mint.
- Serves 6 to 8.
