Banana Brickle Muffins

  1. Preheat the oven to 400u0b0.
  2. In a large bowl, combine the eggs, banana, oil and milk; mix well.
  3. Add the flour, brown sugar and baking powder, stirring just until moistened.
  4. Set aside 1/4 cup of the toffee bits; stir the remaining toffee bits into the batter.
  5. Lightly grease 18 muffin cups or line them with paper baking cups.
  6. Fill the cups 2/3 full with batter.
  7. Sprinkle with the reserved toffee bits and bake for about 20 minutes or until a wooden toothpick inserted in the center of a muffin comes out clean.
  8. Cool for 5 minutes in the pan on a wire rack.
  9. Remove muffins and cool completely on the wire rack.
  10. Yields 18 muffins.
