Greek Pasta With Shrimp And Artichokes
- 6 ounces uncooked orzo (rice-shaped pasta)
- 1 1/4 pounds medium shrimp, peeled and deveined
- 1 (14-ounce) can artichoke hearts, drained and coarsely chopped
- 1 cup grape tomatoes, halved
- 1/4 cup chopped fresh parsley
- 1/4 cup (2 ounces) crumbled feta cheese with basil and sun-dried tomatoes
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1/4 to 1/2 teaspoon coarsely ground black pepper
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- Cook pasta according to package directions 6 minutes, omitting salt and fat. Add shrimp, and cook 3 minutes or until shrimp are done. Drain well.
- Combine artichokes and remaining ingredients in a large bowl. Add shrimp and pasta; toss gently. Cover and chill 10 to 15 minutes.
