Sweet And Sour Lentils With Fine Noodles

  1. Wash and sort lentils.
  2. Place in a saucepan with 2 cups water. Cover and bring to a boil.
  3. Reduce heat and simmer 20 minutes or until tender but firm.
  4. In a small bowl, combine soy sauce, honey, vinegar and ginger.
  5. Mix and set aside.
  6. Cook egg noodles until tender to bite or al dente.
  7. Drain and set aside.
  8. Heat sesame oil over medium heat in a large skillet.
  9. When hot, add garlic and carrot; saute over medium-low heat until carrot is tender-crisp. Add green pepper and green onions; saute just until the onions wilt a bit.
  10. Add cooked lentils and soy sauce and honey mixture. Simmer over low heat for 10 minutes.
  11. Combine all ingredients. Blend well; let stand for a few minutes.
  12. This is even better the next day.
