Caribbean Fish Tacos
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground allspice
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground red pepper
- 1/4 teaspoon ground coriander
- 1/8 teaspoon ground nutmeg
- Dash of ground cloves
- 1 1/2 pounds grouper fillets or other firm white fish fillets
- Cooking spray
- 1 2 (6-inch) flour tortillas
- Prepare Tropical Salsa.
- Combine sugar and next 9 ingredients in a small bowl. Sprinkle spice mixture evenly over both sides of fish. Cover and marinate 30 minutes.
- Prepare grill.
- Place fish on grill rack coated with cooking spray; grill 9 minutes on each side or until fish flakes easily when tested with a fork. Remove fish from grill; break into bite-sized pieces.
- Heat tortillas according to package directions. Divide fish evenly among tortillas. Spoon about 3 tablespoons Tropical Salsa over fish on each tortilla.
